A New Era of Gastronomy at the NH Collection Prague Carlo IV
NH Collection Prague Carlo IV presents the new 1890 Restaurant & Bar and with it new team members.
1890 Restaurant & Bar invites guests to a dining experience rooted in history and full of creative flavours. Located in a magnificent neo-Renaissance palace that once housed the First Land Mortgage Bank, this unique dining destination pays homage to the year the bank opened while offering a modern take on gastronomic excellence.
Under the direction of Executive Chef Radek Benetka, the menu at 1890 Restaurant & Bar presents a harmonious blend of international influences and Czech inspiration. From the first bite to the last sip, guests can enjoy carefully prepared dishes that reflect the chef's passion and the rich heritage of the region. The open-plan restaurant with its various seating options and intimate corners provides a welcoming atmosphere for all-day dining, complemented by seasonal menus.
The sophisticated 1890 Bar is located in the unique historic lobby next to the restaurant. Guests can relax with their favourite drink, enjoy delectable bar snacks and listen to live music on selected nights.

Radek Benetka – the Chef
Radek Benetka has recently joined the NH Collection Prague Carlo IV team and his task is, in addition to maintaining the high quality of the hotel's regular gastronomic operations, which must meet the highest demands of the world's clientele, to prepare the menu of the hotel's new restaurant 1890 Restaurant & Bar, which is located in the hotel's exclusive Neo-Renaissance surroundings. It also takes care of other gastronomic operations - banquet kitchen, breakfast, room service and bars.
Radek Benetka is known for his humility towards quality ingredients and his emphasis on top, complex quality of the food he sends to the tables. He is one of the recognized personalities in his field. Most recently, he worked as a chef at the Palace Art Noveau Prague, Holiday Inn Prague, launched the Courtyard by Marriott Airport Prague, and also worked for the Renaissance Prague Hotel at Villa Voyta as sous chef. He has also gained experience abroad - Radisson SAS (Dublin, Vienna, Edinburgh), Marriott Hotel Surfers Paradise Queensland, Courtyard by Marriott Hotel St. Petersburg, where he started the hotel as a chef.

Štěpán Dvořák – F&B Director
Štěpán Dvořák has been the new Food & Beverage Director at NH Collection Prague Carlo IV since April. He is responsible for the overall operation of F&B services including the restaurant, bar, room service, kitchen, banquet and meeting facilities. Štěpán's main priorities are to strengthen the entire team with an emphasis on raising the level of service, streamlining operations and implementing new restaurant and banquet concepts.
Štěpán Dvořák is an experienced professional in the field of gastronomy. He gained his experience, for example, at the Hilton Prague hotel, where he gradually worked in various managerial positions, from banquet manager to deputy operations manager. Then he was at the birth of a private enterprise El Asador Restaurant and Bar, which he managed for almost six years. He joins NH Collection Prague Carlo IV from the Prague Marriott Hotel, where he was responsible for the F&B department and for creating a new successful restaurant concept and its launch. At the same time, he gained extensive experience in the renovation of the hotel and contributed significantly to its reopening.
"I look forward to using my experience to develop the gastronomy concept at this great hotel. My aim is to ensure that our guests have the best possible experience of the services the hotel offers. Of course, we are also thinking about the local clientele, for whom we are preparing interesting musical evenings and seasonal offers," says Štěpán Dvořák.
