Augustine Restaurant Introduces the New Chef - Jan Horák

From the world's Michelin-starred restaurants to Augustine Restaurant in his home country. The new chef is bringing a wide range of international experiences, an exquisite sense for detail and his creative approach to the Augustine restaurant. "In the kitchen, I'm always thinking about the details and how to be consistent in the experience the guests will get. When your goals are details, it reflects in everything! " says Jan Horák.

Jan Horák has spent most of his professional life abroad, cooking in luxury hotels and Michelin-starred restaurants. From an early age, he learned from renowned chefs around the world. He is still in contact with some of them and gets inspired by them. During his career, he has been working in several international Michelin restaurants such as Restaurant Jordnær in Copenhagen (2*), Restaurant Cracco in Milan (1*) and Hotel Adlon Kempinski Berlin (2*). 

He gained a lot of knowledge and experience during his studies at prestigious international schools in Switzerland and London. His internships in Berlin and in sunny Malta at the Kempinski San Lawrence Hotel were very beneficial for him. His next career steps led him to the Ritz Hotel in London. For several years he lived in Zurich, Switzerland, where he cooked in a luxury restaurant and the Park Hyatt Hotel. He also worked under the same hotel company for almost two years as a Sous Chef in Abu Dhabi, United Arab Emirates. Although traveling and exploring new cultures is Jan's passion, he returned to his home country in the spring of 2019 and put his extensive experience to work at the CottoCrudo restaurant at the Four Seasons Prague. 

Jan Horák comes to Augustine with a new vision, as he says: “In every dish you can recognize my signature style, I don't like to classify myself in certain world cuisines, I don't cook French or Italian cuisine. First of all I cook from my heart, I cook what I like, using the best local or foreign ingredients. Every dish I put on my menu is unique, I always respect sustainability and seasonality as well." He likes to use proven, but also modern innovative world practices in the preparation of his dishes. When choosing suppliers, he pays attention to the quality and origin of the ingredients. One of the important values that Jan Horák holds is a direct contact with the guests who come to taste his menu. Feedback is very important to him, because only in this way can he get even closer to ultimate guest satisfaction.

The Augustine Restaurant

The Augustine Restaurant belongs to the luxury Prague hotel of the same name, located in the heart of the Lesser Town. Housed in a former Augustinian monastery from the thirteenth century, the restaurant offers guests privacy and a unique atmosphere suitable for business meetings or romantic dinners. The combination of historic premises, modern design and world-class gastronomy provides guests with an exceptional experience. During the summer months, guests can also enjoy seating on the terrace or in the Sundial garden, creating a harmonious green oasis. The restaurant's concept also includes The Refectory Bar, whose ceiling is decorated with a stunning Baroque fresco depicting four archangels and the symbol of the Augustinian Order, the flaming heart.
